I live in Seattle so veganism is a whole thing, and I think what I appreciate most is the increased availability of really good produce. I was lucky growing up in a farmer community so it was never a big deal but I remember all the main supermarkets having really pathetic produce aisles and it's nice that that's not an issue now, at least not here. I don't mind paying extra for a tomato that actually tastes like something.
