Someone decided to cut all the wires to the coin switches and I can't seem to figure out the right order of wiring these things up. There are 3 coin slots on the door and I want it set for 1 play per quarter (at least just on one slot) but can't seem to sort the wires out correctly to where any of the slots work without holding down the coin switch long enough for it to complete the startup process so im missing something here.

Start with just one coin one play from a single chute.

The 1st coin chute should fire the Coin relay which should stay active until the Score Motor 8D switch lets it relax late in the 1st score motor cycle. The Coin relay also activates the Reset relay (not shown) which should stay active until reset is complete. It sounds like your Reset relay is letting go too soon. Holding the coin switch closed keeps the Coin relay, and the Reset relay active indefinitely.

To set up a 1 door switch:
Tie the yellow and white wires together to bypass the safety circuit. Connect a pigtail wire to that connection and connect the other end to the c (common) lug on switch.
Connect the yellow-black wire to the no (normally open) lug on switch.
Set 2nd chute adjustment for 1 credit.

Here are photos of my Fireball, which was made a year before your machine. Not sure if it helps.

To hook up a 2nd coin switch, it would be wired in parallel with the 1st switch. From C lug to C lug, and NO lug to NO lug.
