They should be holes if you suck the solder out.... I did this on a board iirc for similar purpose but I was trying to make a debugger. You will need a lot of signals to be able to grab the displays it's probably easier to tag into the display signals instead of bus monitoring.

Tap into the display at the .156 connectors on the top of the mpu board not at the display driver or displays themselves.
