Resets are typically caused by the voltage dropping to low. Does it reset when you hit both flippers on the problem MPU?

If a voltage problem is isolated to a MPU, I would think it is the input plug male pins. See the link Force Flow provided, probably worth going through that list.

This game is not from the system 9-11 era, it will have the WPC98 board set http://www.pinwiki.com/wiki/index.php?title=Williams_WPC#WPC-89_.26_WPC-S

I would recommend looking at the header solder connectionsand connectors, and measuring the 5V DC both at the Power Driver as well as on the MPU in order to get an idea of how much the combined loss is between all the headers and cables; it's possible to have several minor losses between each cable and connector that when all added to together turn out to be too much for stable operation.
