Have you tried reaching out to owners listed at:
https://pinside.com/pinball/machine/williams-pitch-and-bat/owners
http://www.pinballowners.com/
https://user.xmission.com/~daina/tpcr/

or, going through the schematic to identify the unknown relays by their wire colors and/or number of switches?

If you're down to the last two unknown relays, you could compare the number and type of switches on each relay an compare that against the schematic. You could also use the schematic and a meter to identify which circuit(s) drive the two relays.
