Sure they could. It would be a lot of work but from a business perspective it makes sense for them to try and make re-runs/VEs as appealing as possible over what is out on the used market. And it's less work and time consuming than coming up with a whole new game design.
Will they do it? Who knows, except Stern.
I for one would not be a buyer as I do not care much about the display. I played the crap out of Tron while it was in my gameroom and would have done the same if it had alphanumeric displays.
