Skunky aroma is from light penetrating the hops in clear or green bottles. You can easily avoid this by using brown bottles and kegs. When hops get light struck it creates the exact same mercaptan smell as a skunk. That's why you can smell a skunky Corona a mile away.
Shelf life can be quite long in you bottle condition beer. This is done by adding malt or corn sugar in the bottle or keg and allow the remaining yeast to continue to ferment in the closed vessel to carbonate and use up all the remaining oxygen that can cause beer to spoil early. Almost all great Belgian beers are done this way and can have a shelf life for years.
