Feel free to bring in boards during the entire show.

The way I handle things at shows, especially those as busy as Expo, is priority will always go to games at the show. Having a game at the show down is not good, so any game physically there will get priority over everything else.

Then, WPC boards are the most likely to get completed at the show, since that's mostly what gets brought in and I'll have my dedicated fixture set up for WPC boards. Next would likely be System 11 boards and DE/Sega boards. Boards that very likely wouldn't get completed at the show would be any Gottlieb, and early Bally/Stern boards. I won't have a fixture set up for these boards so they will be taken with me and shipped back when completed.

Be aware that by Friday afternoon I'm pretty well swamped with enough work for the entire weekend, so the earlier you bring stuff in, the better chance it will get done at the show.
