Best use of the display by far is Batman66. All the rest of the games mines well be done in dots. They are that bad display work wise in comparison.
Batman does have an awesome display. I can only comment on the others that I have seen. Iron maiden and Guardians both seem to have nice display integration. I also think they both play very well. Especially with the code updates.
The question is about the best game, not the best use of the display -- just from a subset of the large LCD games.
I voted for Iron Maiden.

All of them though pail in comparison to JJPs. They have a lot to improve.
I know its not really in the parameters of your poll, but the best overall games with color displays I've played aren't even sterns. Spooky's Alice Cooper's Nightmare Castle and JJP The Hobbit would be my top ones. I honestly don't think any of the other ones hold a candle to Alice Cooper's video integration, art design and overall theme and concept. The Hobbit uses great movie clips and integration as well.
