There are "carriage bolts" in the sense that, in classic Bally style, have no drive, but they also don't have a square base.

I can't seem to find this little sucker anywhere, not at:

    Fastenal
    McMaster-Carr
    Bolt Depot

I guess this is element Unobtanium, much like the playfield glass bracket carriage bolts?

The Pinball Resource has them listed for coin door on Bally games.

I believe you have the bolt size #4-48 incorrect for the coin door application. This particular screw size is used for holding switches and is very small. That is why you are unable to find a carriage bolt in that size. I suspect you are looking for #8-32 sized carriage bolts which is about the smallest available.

I believe the # 4-48 x 1" is correct since he seems to be referring to the small bolt in the bottom right (and top right) of the door skin on mid-60's Bally doors starting with Rocket III (Apr 1967) through Mariner (Nov 1971). The bolts holding the perimeter door trim are # 8 and have the square shoulder on the back side of the head.

These are not new bolts...I chuck the original in a drill and sand first with 220 grit then 400 grit paper then buff to a mirror shine.

Nope, not incorrect. I measured the screw with a caliper, and I get 4-48. The 8-32 is one that goes on the coin door jam and on the side rails (i.e., the first, big one; the others going back are nails), and GateCrasher sells the exact reproduction, even more accurate than that of The Pinball Resource.

I am amazed at the level of the restoration of the little bolts!
