When retheming/updating a pinball machine...what happens with the playfield?

So I have an old Sharp Shooter 2 that is trashed. (I only have the playfield, so all art on the cabinet/backbox will be new.) There is a good amount of wear on the playfield. If doing a retheme/upgrade, do people typically sand off the old art and add mylar art over an existing playfield, rough up the old playfield and primer, and then apply mylar.

I really have no idea how this is done. Does anybody have any of their favorite websites on how it was done before. I know Charlie from Spooky did the whole Godzilla from FP2. The Matrix guys went from JM to Matrix, etc. I've done touchups before, but this is much more significant. Could anybody respond with a couple links of how others have attacked the problem. I'm not looking to change the layout at all except for the art.
