My vote would go to Gottlieb Sinbad. Easy to learn but tough to master. Chances are if I start 1 game I end up playing 10.

Plus the nice thing with Sinbad is that they are plentiful and inexpensive. Joker Poker would be another great choice from that era for the same reasons.
