For me it's my TZ I love everything about it sounds music artwork (playfield and backglass) plus it's such a fun game.
My last game to go would be Shadow. And prior to that, Doctor Who, because my son and I spent a year together restoring it.
Creature -- Love the theme, artwork, music, gameplay. the ramps feel so good when you hit them. That weird thrill you get in your stomach when the ball just glides up that ramp. what's that called anyway??
Here's a recent thread on the same topic to tie the two threads together:

My grail is unchanged:
Mata Hari, but I hesitate to say never. I am a modern pin guy, but MH was my first, it has a new playfield in it, and it fits under the beam in my basement, unlike newer games.
Man I need to find a Shadow to play... I've never even seen one in person

Missing out my friend...it's the only game I regret selling.

it's pretty fun. i dig pins with multi-level playfields... and this pin has 1.
we have one in the wild here in Austin that is in good shape.
also, can have a pretty long play time, even with my wimpy pin skills.
Monster Bash for me. It is being restored and should look amazing when finished. I love the game, and have a lot of money invested in it as well. I can understand why anyone would say the Shadow. I enjoy it a lot.
It would be very hard to pick just one... If I had to right now, It would be SST. I have fun beating that machine around...
I know I'll catch some flack for saying this, I do have some great machines but my Fish Tales will stay with me to the end....
I would have trouble parting with just about anything that's left in my collection besides my RFM. I know no matter what my Tron, BSD, TAF, FH, and MM will never leave no matter what. As much as I'd like to change it up with some new games I can't bring myself to part with anything in my collection these days unless there was an offer so high that I would be an idiot to pass it up and even then I'd probably be reluctant to part with anything.
The Shadow, but that's probably not a real surprise to anyone by now.

Heh, ironically mine came from Eugene, sorry! There's a reason you see it listed several times in this thread, people like Lyman wax on about it, it's just a special game in a lot of ways. Not for everyone, and it's not an easy game, but nothing else quite like it.
I think the Baldwin thing just hung like a weight around its neck. When I did my translite I had people PM me to say they bought a Shadow because of it, which is obviously flattering, but really does speak to how the original translite held it back. The rest of the theme is great, it's one of my favs not just in general but for the callouts and music too.
