I was wondering what the common idea was on replacing flipper coils. Mine are still working fine, but seem a bit weak and drop down at times when a ball makes contact.

Solenoids typically do not get weaker with time. More likely your machine has either frcitional losses in the mechanism (coil sleeve, bushing, etc), excessive return spring tension, misadjusted EOS switches, or some issue that is reducing the current flow to the coil terminals.
if the coils are not shorted they are fine. money is better spent on NEW E.O.S. switches. the new switches plus properly gapped will make a huge difference
