I'm moving to a new house and I only wanna take one early solid state game with me. Here's the current condition of each game:

1. Blackhole: Very little wear. It was sold to me as a HUO pin but I can't confirm.
2. Joker Poker: Great condition plays great.
3. Black Knight: Gold power coating , CPR silver knight PF, Repainted cabinet.
4. EBD: Project machine, have new CPR PF and NOS backglass.
5 Spectrum: Project machine, have new NOS sample PF.

Why only one?

EBD and Joker Poker are great go to games for a quick pinball fix -- simple rules yet plenty to keep you coming back.
Black Knight sounds like a potential keeper too. . .

I don't even own the machines and I am having difficult time deciding!

Keep them all. Find a friend who would be happy to put the rest in his line up, then swap out machines when you get tired of the one in your house.

Tough decision but if I had to pick from your list I would take Black Knight.

I'd take BH or EBD. Definitely EBD if it were already restored.

Question is, do you prefer to play games or restore?

you have 3 games in great condition that you can play right now, and 2 games which are projects
it sounds like you are moving to a smaller house, are you going to be able to work on the projects in your new house?
