I have seen promotional plastics for sale, and I want to know more about them. I know that some are keychains, and some look like alternate playfield plastics. Were these included with the purchase of a new game, similar to goody bags included in Stern machines? Were these handed out at conventions by manufacturers to advertise a game?

Yes basically. Some of the round ones are actually speaker cutouts where the plexiglass was printed with the design on the actual silkscreen. This saves materials and recycles plastic. I also think others were included as part of the production playfield plastic sheets.
