I'll try to keep this short....
But my mother has collected little elephant figures/figurines ever since I was a young boy. She loved her collection & was adamant about collecting elephants with their trunks pointing up in the air (apparently it's good luck.)
Anyways, one day out of the blue she says "I'm giving you my collection & you can now collect them." So now when she travels or gives me a gift it's usually an elephant figure. I've never bought any myself.
So I don't technically "collect" them. But it seems more like I'm holding onto her collection while she continues to collect them under the guise of giving me gifts. Thanks Mom lol

Video games and consoles--notably Nintendo stuff.
It's not a terribly impressive collection by more "serious" collector's standards, but I like what I have. I've got every console revision of every Nintendo console, including the SNES mini, and the NES toploader, and I've got every copy of each revision of every Legend of Zelda game ever made, and notably, every ROM revision that was released for Ocarina of Time (back from the era when game updates were sent out like pinball ROM updates--on new chips in the cartridges). The first revision of Ocarina of Time has Islamic chanting in the fire temple, and red blood when fighting enemies. Nintendo quickly updated all future games to censor that stuff because it violated Nintendo of America's community standards. You don't come across that version too often.
Snare drums, Paiste cymbals, Harley stuff, neon signs, vintage Honda ct70’s, some vintage audio equipment, I guess I like vintage stuff but I’ve down sized a lot and got rid of a few trail bikes and Ludwig drum sets.
Machinery...not intentional, but have a hard time letting go. New Sharp VMC coming in soon, seriously running out of room!
Shot Glasses -- started within we first got married, you can find them wherever you travel to, they take up basically no space in luggage, and are cheap and each one has a story.
Was great this last year adding a Southern Fried Gaming one to the collection, you can see it below. All shows need to have shot glasses!!
Discus fish tank. Discus from the Amazon river . The most beautiful fish in the world . Very hard to find . I have to fly them in.
Also my Coral Reef tank . It is getting hard to find good coral these days . I use a 400 watt metal halide my electric bill is out of control .

Live coral is like trees in the wind on a mountain....stunning to watch.

I collect motion beer signs as well. I used to go after the Hamm's stuff, but those got really expensive. Almost pinball machine money. I also collect tiki mugs.

Instruments...I've upgraded slowly for years and when i got more into pins it helped having some nice instruments to sell off and help fund this crazy addiction.. uh..i mean hobby
Also i live in ky so bourbon of course.. but i don't think that's a collection because it keeps disappearing... lol

Started our collection with one but now me and my wife have 3 kids. This is the most expensive hobby in the world.
Although it is alot of fun trying to grow the collection.
In the Winter months, I enjoy working on (and collecting) EM arcade machines, but once the
nicer weather comes around, I'm outdoors much more than not and much of the time I've
gathered and refurbished vintage playground and park equitement.
This year I plan on working on the pump merry-go-round which I wanted to get to for quit
a while now..

That is so awesome that you have the first revision! I always wanted to see the red blood. My wife and I (and 4 kids) all cosplay zelda characters. We collect and make the costumes and accessories. We have a lot more stuff but we are mid remodel so it's not all displayed right now.

Steam games that I will never actually play.
I collect a lot of different things but after my stroke and three brain surgeries less is more.
I had a large comic collection, I reduced it. Gave away more than half of them in one box chunks to kids.
About ten long boxes given away to ten kids.
I kept some though, of course.
I collect books like arkham house and signed firsts. Sci fi and horror.
Less is more again. But I still have about two hundred books.
Pinball I got one.
Magic cards a small box but it includes the power nine.
