To me, there's a few interesting questions that can be asked:
1. Who's likeness has been used interactively the most?
2. Who's recorded custom speech the most often?
The question of "who's been in a movie that a game was made off of" isn't nearly as interesting.
For Q1, everyone's mostly figured out the clear winner, which is Harrison Ford and his 4 appearances where his voice was used (SW, IJ, SWT, IJ4). Did you know there's another actor who's been used 4 times? His name has not even come up in this thread yet. I'll give you some time to think about it.
For Q2, I'm pretty sure there are several 2-timers that I know of for sure: John Rhys-Davies (IJ, LOTR), Arnold (T2, T3... I seriously don't know if he recorded anything for LAH, though obviously movie speech is used in-game), Tim Curry (Shadow and I *believe* Congo). This list gets small quick.
OK, back to Q1. One hint: 2 of his movies are the same as Harrison Ford's. It's tough. You probably don't even remember one of the movies.

X-Men is based on the comics, not the movies though, right? That still leaves him with four, although I don't think he's pictured as Death in LAH, is he?
Edit: He is pictured on the top right of the LAH translite.

Mckellan might have been in the movie but his image nor voice appears nowhere in the shadow game.
