You're going to have a tough time finding any salvageable system 11 for 1k. And a tough time finding any of the more fun system 11s in playable condition for 1.5k.
Start with a system 6 or 7, eg the Pharoah that you once gave up. The number one pin that comes to mind reading your writeup is Firepower. Fast playing, fun, 3 ball multiball.
