I'm a semi-regular streamer of pinball and arcade games from the SF bay area. Recently I went on a work trip to Nashville (US), London (UK) and Madrid (Spain). All these places have pinball machines, believe it or not!
So I played around with the idea of bringing a laptop and a GoPro to stream a few games. How bad can it get?
The setup looks like this when playing a game (Pablo from La Millonaria is modelling):

The setup is mainly tailored towards DMD/LCD games as it's difficult to capture the entire backbox, but JJP games sort of works:

Other obvious problems include a lot of glare because of the low angle and viewers not being able to see the entire playfield. Excessive nudging will of course make the viewers seasick as well.
