I would fear that if you loaded one heavy populated playfield on one side first that it might topple!. If that is unstable, maybe an "outrigger" could be attached to stabilize while loading.

Well then very cool indeed. I use a rotisserie and then usually have the other playfield supported with clamps on a counter. Have to admit it would be cool to have them side by side, especially when you do the harness swap.
