Does anyone know where I can get one of these cables? Can't seem to locate one online that is in stock. Thanks!

Make your own.
Or if it's the small boards, board to board. Hard wire it and be done with the crappy connectors.

Yes -
Get a single twisted pair of wired from a trash Cat5 cable, and solder directly to the boards. Remove the IDC connectors.
(Why twisted? You're trying to cut down on interference - this will help.)
Quoted from apscarpelli:so assuming you just cut the wires on the one end and solder?
I would take a picture or notes of the different wires into the connector. Then cut the connector off. Trim a little of the casing off of the end of the wire. Then remove the pins from the board leaving little holes. Stick the wire in the hole in the right spot, and solder.
