I use zip ties to hold assemblies in place and then cut them when done. For the wires themselves, you should always have it secured in some way before you apply the solder. For instance on a coil you would strip enough to wrap it around the lug. You should never hold the wire with one hand and the iron with the other unless you have no other choice.
