Removing the thermal switch is not safe, IMO. Even with the fan cooling the coil, if the fan stops working the coil could overheat. If that happens catastrophically, it could cause a fire.
Basically you need to figure out if the coil died, or the thermal switch died. You could remove the thermal switch just to see if the coil works again. If the coil works without the switch, you just need to get another of that thermal switch (they're pretty easy to get in the US, not sure about AU). If the coil does not work with the switch bypassed/removed, then you need a new coil.
