So, are the cabinet decals, armor color, and Smaug color the only differences? Since my game will be in a row, I care more about what you see from the player perspective than the cabinet decals. Just trying to stay informed so I can make a decision about whether to switch or keep my LE.

Nothing concrete at the moment. The differences between the LE and SE version are indeed pure visual (also a Smaug attract mode).
I believe Alex gave a description about the powder coat I will try to look that up.

Jack stated that they are going to shoot videos.

The prototype has the seaside bronze and that looked good with the LE decals.

NEW orders will be taken until 31 December 2014.

I do not like the left side art of the LE model. Do very much like the SE art and indeed it has more value. And it will be truly limited. Yet I would like to see pictures/videos of the SE version

I cannot find the post, but Alex posted some examples of rims that have gold powder coating and they looked very good. He said the gold trim on TH SE is made up out of different coats and a nice clear coat on top. Should look nice and shiny Still would like to see it though.

Jack stated on the JJP forum that SE owners get a choice in what version of Smaug they want in their pin.

Not known. JJP never published any numbers and most likely they never will.

Safe to say that there are more LEs than SEs
