Is it possible to enter the menu once the game has started, enter switch test and then continue playing to see what switches that are triggering?

Not really. You can put the game in switch test, and if you have the glass off you can toss a ball around the playfield, but there is no game code running to enable locks, start modes or any other features.
I'm pretty sure the flippers will operate in this mode as well so you can see the EOS switches close.
