Not true. LEDs are as analog as vinyl (and many have been used to process audio for vinyl!). You just have to think in current, not voltage.
The problem with RGB LEDs is that most of them are poor at mixing the individual RGB color components together, so you end up with color smearing and a less-than-full color spectrum.
On top of that, the typical method for driving LEDs these days is with a digital on/off PWM signal and not with a true current-controlled topology (which LEDs prefer), so this even further reduces the color spectrum that can be reproduced. A tad more than 7 but less than 16 million.
