Godzilla is shaping up to be one of the best machines of all time, it really is that much fun to play. The Pro is great, and the Prem/LE toys make the game play experience even more memorable/immersive. Overall flow is virtually identical from my experience playing both the Pro and Premium. Godzilla MB takes just as long to start on both. The Prem/LE building drops to release the three balls off the roof at once. The Pro hangs onto the ball on the Newton magnet during the video where the Premium building would lower, then lets go and auto-launches two more into play. It's like Raptor Capture on Jurassic Park; Pro players have an unskippable movie while the ball sits on the Control Room post where Prem/LE owners watch the raptor gate raise up from the playfield.
For the more technical gameplay impacts of the Prem/LE features, there is a Super Train mode that isn't in the Pro, plus the Mechagodzilla targets are easier to hit on Prem/LE since they rotate to where more flippers can hit them when they're active. The building's diverter can also make a difference for some modes like Jet Attack and the Gigan Kaiju battle by returning right ramp shots to the left flipper for an easier repeated right ramp shot.
Roughly the same for Mechagodzilla MB's start, although you do get a ball into play a little faster on the Pro since it drops down the lane to the flippers right away instead of sitting on the MG magnet before both launch two more balls into play. In my opinion, the easier to hit targets on the Prem/LE make up for the short wait.
The Prem/LE bridge looks better than an unmodded wire ramp, otherwise it doesn't really do much for the game. The bridge chatters when you hit the Newton magnet to damage/destroy the bridge, and it's fun to have the ball drop out of the rail for the start of Bridge Attack MB, that's about it.

A good portion of the mods are universal to both table models, or are designed to make the Pro look more like the Prem/LE which quickly narrows the price gap making the Pro's lower cost a moot point. It's also important to remember that the code isn't finished yet, so there may be more functionality coming that takes further advantage of the Prem/LE toys. Jurassic Park is a good example again, the T-Rex head's ball throw wasn't in the earlier code releases. The unreleased Terror of Mechagodzilla mode is the most plausible for a potential difference.
At the end of the day, you have to make the decision if the features of the Premium are worth the additional cost.
