Those are mostly menu settings. On some people's machines those avoid SDTM drains, YMMV as each game is a bit different and ball trajectory is also defendant on your playfield angle/level. Basically you'll need to do some tweaking/"dialing in" to get it playing how you like (true for any NIB pin). I would have thought the Tatooin coil and the scoop were one and the same (in which case he probably saw different people using different settings) but I haven't looked closely.
Software version should be displayed on startup. If you don't have the latest you update with an SD card. Don't feel bad if you have to do that, as with any brand new game several more revisions will (hopefully) be forthcoming so you'll have to do it soon enough anyway.
Oh, and the soft flipper strength is a preference but the thought is you're less likely to get air balls and broken plastics. Makes sense to start there and turn it up if the flippers are too weak to make ramp shots.
