Good point about the steepness. If it's not steep, it's going to have a lot more side to side action. That's really the only dangerous time on Star Wars as all other shots return to the flippers.
I try to tell people all the time try setting your games at home up a degree or so and see how they play. Personally I find most games play a lot easier when set at around 7.5 there are exceptions. Once you get use to a quicker ball that travels to the flippers, dead bounces properly etc steeper games play much easier.
One of our local locations had Aerosmith out of the box with the back legs almost flat and that thing was almost impossible to play, floaty as hell.
I also find if the game is too flat any slight leans on the side to side level are exaggerated ten fold.
