I would steer away from the plunger. You will continually be hitting it with your knees and shins. Actually, I wouldn't go with buttons either. Keep it clean. I do like the idea of cutting down some legs and using them but I would use the roundest bolts I could find for the knee/shin reason, like carriage bolts.
