I know back in the old days, ground plugs didn't exists, weren't all that common.
Having said that - wondering if my '75 Williams Big Ben should have a three-prong, or two-prong plug in it?

Not a silly question at all.
For safety, you should add a grounded plug to it:

If the 2 prong cord looks original and is in great condition. You could save it for the next owner of the game, if you have any concerns of keeping the game original. Otherwise if it has cracked insulation, exposed connections on the prongs, less flexible, etc. just get rid of it. Surely, no one has passed on buying an old pinball machine that is great condition that didn't have its factory installed power cord.
