I saw that in the background and wasn't sure what it would do. Is flipping the table a genre of game in Japan?

Nothing to it, hang them up, shoot them with bleche white or something similar, wait for the crap to loosen up, then hose them off.

Looking for some help to find 12v Orange Frosted LEDs to install behind the gauges. 6.3v Are pretty easy to find but i need 12v.

Buy some on eBay that are made for cars (12V). Not sure if they have frosted domes so you may have to salvage some off of pinball LED's.
