Just picked up a Night Rider that has flaking on the exterior of the cabinet. It's bad enough to where it is coming off with very little contact. Wondering what I can use to prevent further damage? Has anyone sealed a cab with triple thick? Any other suggestions?

I'll admit it here...
I touch up cabinets with cheap craft paint and seal with clear paint. I use satin finish. I've also used it to keep paint from falling off a cabinet - like you are describing.
