Check the voltages at the test points on the power supply board, especially the 5 volts.

Even if the 5v measures OK at the test points, it may still be dragged below reset value when the flippers are pressed, resulting in the game rebooting.
Failing 5v circuit is fairly common with the DE power supply board. The recommendation may still be to rebuild it with a cap kit.
