I have been thinking about this specific LE situation a bit. Since it is only a backglass alternative, I think it might be interesting to approach it in the future a little differently. The pinball company sells the games with a rad art package that they pay the artist to produce. Then come up with an arrangement with the artist that encourages the artist to produce additional art packages which the artist sells and gives the pinball company a bit of the revenue. The artist could then do limited runs, say 50 signed and numbered. If the first 50 sell out instantly, make another design and sell 50 of those. I could imagine that certain fans would snap up each and every one. But this way, the pinball company itself can focus on the art package that is going to work best for the "product."
