    Nice. I did this for Easter. How long did it take you on the Weber? I was fighting wind and rain and it took at least 4 1/2 hrs. Very labor intensive but it was tasty.

    I think it was about 160. One of the issues was my skewer was too tall to put the lid on the grill. So it was pretty much direct heat on whatever side was facing the coals, turning the spit every 15 mins. I’m sure i’ll make it again since we have tacos pretty much every week here. Barbacoa is the current family favorite.

    Decided to let the chili sit for another day in the fridge and made some Thai Basil Chicken instead. Little too much fish sauce but it was tasty.

    Ribs, strip steaks, potato pancakes and grilled veggies. I feel like I have a basketball under my shirt, so stuffed!

    Yes. Garlic, onion, gluten, and a ton of other things. My wife has to be on a low fodmap diet. I pretty much have to make everything from scratch. You find things like that oil to make a difference. It’s tough but my stomach has been a whole lot better too

    I do not have either but am interested in the Slow N Sear. I usually use the snake method for smoking and plan on doing pork butt this weekend. Love pulled pork.

    Skirt steak again (hey I love skirt) and jerk chicken thighs. Was going to smoke pork shoulders tomorrow but rain all day and I’m sick of cooking in the rain.

    It was a one-off at Costco. First (and maybe last) time I’ve seen anything like these around here. They sold whole racks of the plate earlier in the week, which I missed. They were so epically rich that I ate until I was queasy. I was so excited making them, my family didn’t get it and thought I was nuts.
