I didnt really follow one, i just looked at a few recipes and then made my own
Trying to remember.
1/4 cup good quality spanish olive oil heated over medium heat.
Add 1 finely diced onion, 1/2 diced green pepper, 1/2 diced red pepper, and 1/2 diced yellow pepper, and 4 garlic cloves
Once onion is cooked, add in 1/2 cup white wine, 3 finely diced roma tomatoes, salt, pepper, paprika, and a good pinch of saffron.
Let simmer for 5 min, then add in chicken thighs cut up, sliced chorizo sausage, 2 cups of paella rice and smoothe out, after 5 min add in 4 cups of chicken broth, bring to a boil shaking occasionally but not stirring. (You want the rice to brown/burn at the bottom).
Once boiling, lower heat, add in shrimp and scallops, and allow to simmer until rice is tender and shrimp is cooked, last 5 minutes add in a bag of frozen peas. Once done, serve with lemon wedge

Yes. Very expensive to make, and thats a huge part of the cost
