Quoted from dirkdiggler:A friend of my wife's dropped off a bag of fresh cucumbers the other day. We have lots of pickles still, so we made relish. Lots of work. Few hours prep yesterday to soak overnight then a few hours today.

That's cool! I've been wanting to try making my own pickles after buying some Grillo's pickles. They were so much better than Vlassic.
Quoted from dirkdiggler:Cooked up the other walleye today. Used a Guy Fieri tequila lime marinade recipe. Was ok. Dont think the garlic was needed. Prefer the one I made last week with tequila lime and siracha.

Try some Nummus next time you have some fresh white fish. It's a cured fish salad similar to ceviche.
Nummus;
500g of white fish fillets, cut into small cubes.
White vinegar
1/4 to 1/2 a cup of lime or lemon juice
1 tbsp salt
1tbsp sugar
5 cloves of garlic
5 tsp fresh ginger freshly chopped
fresh chillies, chopped (as many as you like!)
1 large onion, sliced
Place the fish in a mixing bowl and pour about half a cup of vinegar over it.
Gently knead the fish until it starts to "cook"; adding more vinegar if necessary.
After a couple of minutes add half the lime of lemon juice and continue to knead for another minute.
Add the salt and continue to knead until fish feels cooked (a minute or two should be enough).
Add sugar, chilli, garlic, ginger, onion, and mix well.

Just what it sounds like. Lasagna, stuffed inside a meatloaf. Someone at work saw it on ticktock and had me make it. It was well worth it!
Had Loco Moco. I use "better than bullion" beef bullion paste in the jar rather than bullion cubes and double the gravy because there's never enough for everyone. I also make sure the eggs still have runny yolks. The flavor of this is vaguely reminiscent of hamburger helper rice from the 1980s I had growing up. Here's a youtube video that turned me on to it...
Anyone make their own sour dough breads? I’m thinking of making a starter to get going for the winter

Wow!
I did some Texas Twinkies yesterday that were incredible. I smoked some cream cheese for 2 hours and then mixed in some chopped up brisket. Did a pre-smoke on the jalapenos for 30 minutes so they were easier to stuff.
Filled them with the cream cheese / brisket mixture, wrapped them in bacon and put them back on the smoker for about 90 minutes. They turned out awesome!

Quoted from Bax1:Anyone make their own sour dough breads? I’m thinking of making a starter to get going for the winter
I used to bake alot, a couple of years ago. Sour dough is by far the tastiest, however since I prefer to live by myself I find it hard to finish a loaf before it turns stale.
Quoted from mtn-:A shitload of falukorv! A very spicy tomatosauce somewhere in the bottom there.

Ok I gotta hear more. So after looking up falukorv, is it like bologna? Are those apples in there too?

I dont think I've ever had bologna. I have heard of it though. Yep, apples. Sour apples goes very nice with sweet/strong mustard and onions.

Bologna usually have some stuff in it, like cheese, olives, chili etc... I've eaten that.
I would say falukorv is the same as a regular bologna without pieces of stuff in it.
Made korvstroganoff (sausage stroganoff) with rice last week.
Considering how easy and inexpensive it is to make, I'm always a bit surprised that it tastes so good

I'd say bologna in America typically doesn't have pieces of stuff in it. The exceptions I can think of are olive loaf (olives) and mortadella (pistachio nuts). Usually it's just ground meat and spices.

What is vegamite? I know it from the Men at Work song.
Quoted from Jaybird815:What is vegamite? I know it from the Men at Work song.
I think it may be the equivalent of Vitameatavegamin made here in the US
Everyone should try Vegemite once... for most it's the first and last time they will ever try it. Let's just say it's an acquired taste.

Worth a watch. 1 out of 3 ain't bad:
Quoted from RBradley:Can you share the prep of the peppers after pick em? And - did you try it yet??
I tried it. Itll melt your face off. I took all the peppers, jalapeno, ghost, scorpion, chili, cyanne, satans kiss, and a couple others, sliced them down and put them in the dehydrator overnight. (I left the seeds in). After they were good and crispy, i just ground them all up in a nutribullet and funneled them into the jars. Seems like itll be good, but i may change it next time and add garlic and other spice so its an all in one spice.
