I believe it is mostly due to the combination of the modern display (DMD or LCD) and code, but a very small part is the newness factor which goes away at some point. The coder on newer games has the advantage of learned techniques from older games for making gameplay more interesting and diverse. Improved sounds/music and lighting are also big factors in my opinion.
