If you don't have a business name, I would suggest to use you own name. It will be displayed on your invoices and while I can't give you official tax advice, in the EU this is how you would do that.

Ok this is a common misunderstanding about Stripe. They are not a bank or an online "wallet". They are only a processor of payments. They are specialised in safely taking (credit card) information and processing payments with them, then depositing the funds of said payments to the account holders bank account. they take care of the security (i.e. 3D secure authentication), invoicing, and all the technical stuff of getting this working on a site like Pinside.
Yes, they will also allow you to take payments by email, phone or send out invoices. For that, simply log in to your Stripe account and follow their help guides. But understand that Stripe is not a "wallet".
But for Pinside, we just use them to accept and process payments, without us (Pinside) actually having any access to card details. That's important because this way Pinside can be PCI compliant. We don't have the burden of security that comes with processing card payments. We let Stripe handle this. They are great at this and already process payments for big names like Shopify, Booking.com, Deliveroo, Google, Lyft, Zoom, Slack, Amazon, Salesforce and many more.
So you set up an account with Stripe (easiest through the "link to stripe" button in your shop setup page, as it will pre-fill most of the form for you) and then they will handle card payments and deposit the funds to your bank account on a rolling basis. I think the default payout scheme is 7 days, but you change that to every day or every month or anything in between. Once your account gets the "trusted status", funds can be payed out as quickly as 3 days after a payment was processed.
It's also important to note, as a Shop owner, that once a payment is successful, you can safely send out your goods immediately. The funds are guaranteed by the card issuers bank and will be deposited in your bank account in the next batch.

Well it's important to understand that you cannot pay for purchases with the funds in your Stripe account. It's not a wallet. It doen't act like a bank account. It's only a processor. An intermediary step between your customers card payment and your bank account.
You pay with your card. Stripe processes that payment. Payee gets their money.
So allow me to make a simplified explanation of the whole process: You put some stuff in your Pinside Shopping cart. Then you go to our checkout page and hit the "place order" button. You will now be forwarded to a hosted payments page where Stripe takes your card details and process the payment securely. Your bank tells Stripe "it's okay, this payment is valid". The Shop will be notified that the payment was successful and the order placed. They are guaranteed of those funds and ship out your cool new mods. The money will be deposited in to their bank accounts in a few days in "batches" of payments. This keeps the fees low.

Yes and no. It indeed takes a few days for the actual funds to hit your bank account. And you cannot use those funds until they do. On the other hand, for a business this shouldn't be an issue. Again, the funds are guaranteed once the payment is made and approved (i.e. when Pinside says the order is paid, it IS actually paid), so you can start shipping straight away.
For what it's worth, I personally feel Stripe is much safer than PayPal. Stripe only handles card payments, then sends the money to your trusted bank account ASAP. Your money doesn't sit in an online 'wallet', like PayPal, waiting to be hacked by someone. But that's just my unsolicited opinion
