I use 2 Canon camcorders mounted on Tripods. I arrange one to view the entire play field and focus the other on the back box or score display(s). I edit the in Vegas video. Have used versions from 5 up to the latest consumer version, I believe 14.

    I film in HD 1920 x 1080 60p at the highest quality.

I do a picture in picture with the score display in a smaller window in a corner. I add text, backbox photo etc. I sync the 2 videos by the soundtrack and use the left channel from the left camera and the right channel from the right camera for a wider sound field. I apply any edits, fades etc and save in high bitrate MP4 format at 1920 x 1080 60p. I get close to real time rendering. A half hour video takes about 32 minutes to render. You can view one of my vids here for the end result.
