My definition of gimmick in this case is an innovative feature and rarely seen feature which does not demand to become standard.
In this case the word "gimmick" does not carry a negative connotation.

Banzai Run's vertical playfield
Pinball 2000-type holograms (Revenge from Mars and Star Wars Episode 1)
A projector in the apron as in Stranger Things Premium and LE
Triggers (Demolition Man)
Another mini-playfield like, but not necessarily identical to, The Power from Twilight Zone
A ceramic ball like the one in Twilight Zone and Avatar LE
A video mode with a level editor like Bride of Pinbot 2.0
Magna-slings in Ghostbusters Premium and LE
Rising and Lowering pop bumper from Cirqus Voltaire and others
Another mini-playfield like, but not necessarily identical to, The Sanctum from The Shadow
Another marionette head like Funhouse or Road Show
Under-the-playfield holograms like in Creature from the Black Lagoon
Mist Multiball like in Bram Stoker's Dracula
An industrial strength fan like Whirlwind or Twister
A ramp like Iceman's ramp from X-men Premium and LE
A ball saver like the one in Goldeneye or Alice Coopers Nightmare Castle

Edit: This isn't a list of gimmicks I'd like to see return, these are just all the gimmicks I can think of.

Modes that you navigate like a map as in Stern Jurassic Park
Plundering as in Jersey Jack Pirates of the Caribbean
A multiball you qualify with switch hits as in Elvira's House of Horrors
Stern's Meteor has a thing where you're incentivized to get all but one of the drop targets down, or as close to that as you can get.

You got some great ones listed. Mist multiball and the rising pop bumper would love to see in the same game!

Champion Pub, the game with all the gimmicks. From a friend who recently played it at a bar recently texted me this the other day:

"Man, I know it's a gimmick, but I think jumping rope is so cool. Those boys at Williams were really thinking. I don't even want to play the rest of the game. I just want to jump rope."

For me, I'm not sure I'd like to see a "return" in any of them--unless they're done in such a way that pays homage to the original game it was featured in. Plenty of room today with modern technology and engineering to come up with fresh, new ideas!

A magnet at the tip of upper flipper for an instant ramp shot as seen in Rollergames.
A jump ramp as seen in Robocop and a couple others.
Rising and Lowering ramp for alternate path or target.
Black Hole style lower playfield.
Chimes like Time Machine
Bell like Space Shuttle.
Real Knocker coil.

Speaking of knocker coils I know of only one, maybe two cases where the knocker is tied into gameplay.

In Last Action Hero when you win an extra ball the DMD animation is timed to the knocker which is a really nice touch.

When the statue loses its head on the screen KNOCK.

Danesi ball lock. Almost any game would be better with it.
Flight 2000 ball walker lock.
More magnasaves.

I want video modes that change with the seasons like animal crossing. This would go great with a pin the has alot of content like if they ever made Futurama you'd battle Santa in December and so on...

I gotcha, LOL, and I understand. I was hoping nobody wanted banana flippers to return, as man, they were horrible to shoot with IMO.

Tron 1982 with a vertical playfield where you play the light-cycle arcade game but it's pinballs being moved with magnets.

As a newer player I like this topic for teaching me about all the neat, unique machines.

That Championship Pub one looks awesome!

I'll say one gimmick I don't think needs to return is 13 ball multiball from Apollo 13. Looks like 90% of the time most of the balls drain almost right away.

the "Flex save out lanes" from Hard Body! I would love to see this implemented into a modern game. I hate the hard body artwork, theme, and sounds BUT MAN WHAT A FUN GAME!!

imagine how trashed a nowadays playfield would look with 13 balls smashing into soft wood

I'd like to see more drop targets hiding stand-ups. ACDC TNT and Beatles have both done this but I'd like to see it become more prevalent. I'd also say more inline drops and drops blocking ramp shots.

Progressive drop targets like Centaur or Eight Ball Deluxe. The one cool thing about Led Zep is the rising spinner. That's pretty cool.

What would I like to see again besides mist multiball?
I really like the 3 stages DrWho-toy. It could be made in a different way as well, like just 1 or 2 shootable 'doors' instead of 3, and some standups next to it, or lesser width, or... etc. You can come up with all sorts of ideas. I think the building with 3 stages in GZ is great as well, not as cool as DrWho though . I haven't played that, so maybe I have to retract that last statement someday.

I always thought that the Thing hand on Adams Family and the dinosaur on the original Jurassic Park that pick up the ball were neat mechanisms.

Interactive backglass lighting like in STTNG. Lights up a specific area of the backglass when a certain mode is running.

Joust pinball is my daughter and I favorite game to play when we go up north to visit family at the local arcade, it's just a great design and a lot of fun. If I could find one for a decent price it would be my next pin probably.

How about an Archimedes screw? similar to what was used in Verne's world by spinball and again later in Gottlieb's Big House

I like the toy police car in Police Force that starts the multiball. Just something satisfying about it.

More use of neat magnets such as the backboard in Kiss.

I loved Theatre of Magic's innovative use of magnets both in the trunk and in the magic ring. And the trunk in general - having 3 different mechanisms in one point of play was pretty cool.

Jungle Lord's (and maybe Hobbit?) use of drop targets that set and reset in various configurations is a fun little mini challenge.

And some of the early Bally (eg Centaur) have these super light wire gates that allow you to nudge yourself from the outlane to the inlane, if you're good at nudging, and it's a pretty satisfying thing to do.

Nothing like the feeling of burying a Vari Target on an old EM. On most you had to hit it just right. For modern game flipper strength, you would need a narrow entrance and much stronger spring. Safecracker was the last game I remember with a Vari Target.

How about a game with factory topper that comes on all machines? Like Fish Tales or Whitewater.

Real knockers would be nice especially if it is LOUD and used as a game sound like in Houdini.

How about separate player score displays instead of on the LCD? Like TNA.

Outlanes set up to skillfully nudge the ball back into play like Centaur or IJ?
