SUNDAY: Sunday is mainly about the tournament. They are under-represented not only in this thread, but in most topics in the Events sub-forum. I have been to all 31 Pinball Expos and saw the evolution of the schedule that led to Sunday being the way it is. Adding more to Sunday (e.g., repair workshop) would depend on the presenters/leaders being available.
I don't speak for most tourney players but am one of them. I really love tournaments and didn't make and seminars (only been to one in three years) and played mostly in the tournament, hung out with friends and also played in the free play room. Sunday is fine as a tournament day for me and the only thing I'd like to see is a way to reduce glare on the tourney bank although now, Expo Glare™ is a thing so maybe people would complain if it was missing
