    Pro:

    NOSE
    Dry corn, toffee, oak, vanilla Necco, citrus peels and Twizzlers with some bits of cocoa and mustiness.

    PALATE
    Oak, dried corn, citrus zest (tartness), toffee, cocoa powder, vanilla Necco and a light something that makes me thing of strawberry shortcake.

    Me:

    No Twizzlers or strawberry shortcake, but very drinkable. The vanilla and oak is strong with this one.

    Buy it while you can at the low price if you like it, it was Whisky Advocate's Whisky of the Year so the hoarders and bottle flippers are gonna grab it all up to sell for $100+ on the secondary market. I had a bottle a few months ago, thought it was just ok and didn't plan on revisiting it.

    I cooked up a pound of high quality, thick cut bacon on a low heat. Once done cooking I strained the fat through cheesecloth to pull out any of the extra bits. Then I mixed it with #14 Maple Bourbon, made by a local distillery. I did my best to emulsify the liquids by shaking it roughly for a good 15 minutes. Then I let it sit at room temperature for another hour or so to let it start to harden.

    Right now it's sitting in my freezer to ensure that all the fats have completely solidified. When I get home today, I'll crack the fat puck on the top and strain out the liquid through a cheesecloth again. End result should pull all the fats entirely from the bourbon, but will leave the bacon taste behind.

    If only there was " McCormick Bacon Extract" in the baking aisle, like lemon, vanilla, etc. Would save a ton of time and effort!

    But seriously, if you are into craft/artisanal cocktails and don't want to pay $20-$25 per, there's no better place than home.

    I wonder how a Knob Creek Smoked Maple (fat washed with maple bacon) old fashioned (using pure maple syrup as the sweetener, of course), with a lightly smoked water clear ice ball, with a candied stick of bacon for a stirrer would be?

    Overkill?...probably!
    Exuberant?...definitely!
    An inefficient use of time and ingredients?...absolutely !
    A hot mess?...likely!

    Chances I'll give this one a try, because....America? 100%!

    That certainly qualifies as a find, I don't think you can do much better for $29.99.

    PA seems to get ER by the semi load. Its more difficult to find in Delaware and the price will be higher, even Stateline in MD has moved this to $39.99 and they are competitively priced on almost everything

    My wife’s teaching aid gave her this as a Christmas present. Never heard of it but gave it a try tonight. I’m not one of those guys that can tell you that I smell “lightly use sweat socks with oak bark” but it had a good smell, it tasted a bit “spicy” and the burn was pretty light. It’s not a well aged bourbon (the claim was at least two years so I’m saying close to that aging) but overall not bad. No idea what the price would be normally as it was a gift but I’ll drink it.

    I’ve had the smoked maple knob creek. It’s enjoyable, but a bit syrupy sweet and could be a higher proof.

    I strained the bourbon through a cheesecloth tonight and I didn’t manage to get all of the particles out. I’m going to steal a coffee filter from work tomorrow and see if it helps clear it up a bit.

    On the first taste I would say that there is a strong bacon taste. It goes well with the maple bourbon but it’s still a bit to sweet. I think next time I would go with a higher proof to help offset the other tastes. I wouldn’t drink this straight, but it would be great in a cocktail.

    Also, got a call from my favorite liquor store owner. She let me know they got a case of each in stock and had reserved me one of each.

    Haven't had any of this in a long time. I do really enjoy four roses products they are consistently good.

    Here’s to my first night of a week’s vacation. 15 year Knob Creek Binny’s Kenwood Liquors store pick. Don’r sleep on KC 9-15 year. It took me a while to realize it’s some of the best readily available (and reasonably priced) whiskey out there. $45 for a 15 yr isn’t something you find too much anymore.

    Edit: This is way too oaked for me, never mind lol. The 12 years are always great.

    Still nursing this bottle. I find this to be such a well balanced bourbon. Yes it's a little light on maturation but the flavor profile is delightful and one I really enjoy. You could truly sip on this bad boy all afternoon.
