One thing to note about burning the EPROMS for PEMBOT is that U26 and U27 are different EPROM types with different programming voltages. U26 is a 27128 (NOT a 27128A!) and U27 is a 27256. The 27128 has a high programming voltage. So if you set your programmer to burn a 27128 but have a 27256 in the socket, you'll fry the chip. Also, you will have to be careful when pulling the original ROMs and installing the replacements as old sockets can get damaged easily. But apart from those two things, I cannot think of anything else that can easily go wrong.
The patch format (BPS) has internal check-summing to make sure that i) the ROM you apply it to is the correct one, ii) that the patch is uncorrupted, and iii) that the patch has been applied correctly, so you don't have to worry about the code.
