The credit display in my paragon is out.. I just swapped it out for a known working display and it had the same issue. Is this a game setting or does anyone know what wires to look at?

The number of credits displayed on the machine is a setting that can be turned off and on via the DIP switches on the MPU. What happens when you open the coin door and press the small red button on the inside of the coin door? The first time you press the button, all of the feature lights should flash on and off. The 2nd time you press the red button, all of the digits on all of the displays should toggle from 000000 to 999999. When you run this test, does your credit/ball in play display work?

As we used to say. "that's not a bug it's a feature!". In some parts of the country it was illegal to display the number of credits less you try and sell them. Thus the lamp at the front corner of the playfield.
If the display is good in self test you most likely have credits display disabled. Look at the cards stapled in the backbox for the switch that turns display credits on and off.
