My favorite is both, smoked than flash fried to make them crispy.
I've had pretty good luck smoking and then throwing them in batches in an air fryer to crisp them up. I'm not a fan of deep frying, just for the sake of cleanup etc.

Dry wings with paper towels season them and then put in fridge overnight uncovered to get skin crispy
