The ram at U8 is marked 84256C-10L What chip is this (5101, 6116,6264 ect).

I'm doing a series of NVRAM upgrades to our pins and just want to make sure I set the DIPS correctly (AnyPin NVRam).

If it's a 62256 do I need to remove the w3 jumper and replace the 1k resistor at r93 with a 1.5k?

It is not 5101 not 6116. Those are for much older games than WPC.

6264 or 62256 can be used on TOTAN MPU, just depends on the jumper configuration.

Since it has a jumper at W3 and a 1k resistor at r93 is the existing ram a 62256 then?

yes. The 256 in your old RAM 84256C-10L part number partially gives this away too. Comparing 84256C-10L datasheet to the 62256 datasheet also confirms it is a 62256 compatible part.
