Wax/clean the playfield now while you have it torn down. Slowly start piecing it back together after that. Luckily Sorcerer is not that complicated of a game. Its been a while since I tore mine down but it shouldn't be too bad figuring out what goes where. After that you can start worrying about electrical issues. Your biggest hurdle is going to be putting it all back together again, so just get that out of the way first. You can work on the other stuff when the game is back together just as easily as you could if it was torn apart.
